The 2-days-only boozy lunch showcase will be hosted at dojo-like Gonpachi, whose interior was reportedly the inspiration for that bloody fight scene in Kill Bill: Vol. 2, so prepare to get all Crazy 88 on this tech’d-up menu:
- PB&J (technique: spherification, fat powders): grape globe, peanut butter powder, toast point
- Oyster & pearls (nitro shucking, air/foam, dippin' dots): shucked kusshi bivalves, sea-foam, creme fraiche dippin' dots, salt bed
- Egg 147F (low-temp cooking): ratatouille, basil
